Outback Bread

 

Outback Bread

1 1/4 cups room temp. water
2 T. butter, margarine or vegetable oil
1 T. caramel color
1/4 cup honey
1 3/4 cups wheat flour
2 cups all purpose flour
1 T. cocoa
1 T. active dry yeast
1 T. vital wheat gluten
1/2 teaspoon salt
cornmeal




Add ingredients to your bread machine in the order your machine suggests.  When dough cycle is complete, divide the dough into 4 pieces.  Allow the dough to rest for a few minutes and shape into loaves.  Roll the dough in cornmeal and place on a greased cookie sheet or in load pans.  Let the dough right for another 20 minutes.



Bake at 350 degrees for 20-25 minutes.

Cinnamon Rolls


Cinnamon Rolls

1 cup milk
1 egg, beaten
4 tablespoons melted butter
4 tablespoons water
1/2 (3.5 ounce) package instant vanilla pudding mix
4 cups bread flour
1 tablespoon white sugar
1/2 teaspoon salt
2 1/4 teaspoons bread machine yeast
1/2 cup butter, softened
1 cup packed brown sugar
2 teaspoons ground cinnamon
1/4 cup chopped walnuts (optional)
1/4 cup raisins (optional)
1 teaspoon milk
1 1/2 cups confectioners' sugar
4 tablespoons butter, softened
1 teaspoon vanilla extract

In a bread machine pan, place the milk, beaten egg, melted butter, water, vanilla pudding mix, bread flour, sugar, salt and yeast in the order recommended by the manufacturer. Select the Dough cycle. 

              

When cycle is finished, remove the dough, and knead for 3 to 5 minutes. Roll out to a large rectangle. 

              

Mix together the softened butter, brown sugar and cinnamon. Spread over dough. Sprinkle with chopped walnuts and raisins, if desired. Starting with the widest end, roll the dough into a log. Pinch to seal seams. Cut into 1/2 inch to 1 inch slices, and place in a greased 9x13 inch pan. Place in a draft-free space, and allow to rise until doubled. 


              
Preheat the oven to 350 degrees F (175 degrees C). Bake for 15 to 20 minutes. To make frosting, mix the milk, confectioners sugar, softened butter and vanilla in a small bowl. Spread over warm cinnamon rolls.

Garlic Naan


Garlic Naan

1 (.25 ounce) package active dry yeast
1 cup warm water
1/4 cup white sugar
3 tablespoons milk
1 egg, beaten
2 teaspoons salt
4 1/2 cups bread flour
2 teaspoons minced garlic (optional)
1/4 cup butter, melted

In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume. 

              

Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.


 
During the second rising, preheat grill to high heat.

At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

Soft Pretzels


I made this recipe in a bread maker on the dough cycle and then formed the pretzels by hand.  You can easily make this without a bread maker - just a little extra work will be involved.  If you're using a bread maker, add the ingredients in the machine in the order recommended by the manufacturer of your bread machine.  These pretzels are even better than the ones in the mall - soft and chewy.  If you find it difficult to form the pretzel shape (the first batch it was easy, but the second time around I had a terrible time working with the dough), just roll it into a ball and you'll still have the delicious taste of the pretzel - just a different shape.  I'd love to try making pretzel rolls for some gourmet sandwiches sometime!

Soft Pretzels

1 1/2 cup warm water
1 1/8 teaspoon active dry yeast
2 tablespoons brown sugar
1 1/8 teaspoon salt
1 cup bread flour
3 cups regular flour
2 cups Warm water
2 tablespoons baking soda
to taste coarse salt
4 tablespoons butter (melted)

Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise at least 1/2 hour. 



 
While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 Tbsp baking soda. Be certain to stir often. After dough has risen, pinch off bits of dough and roll into a long rope* (about 1/2 inch or less thick) and shape.  Be careful not to over work the dough, or it will be difficult to roll and form into a pretzel shape.  Dip pretzel in soda solution and place on greased baking sheet. Allow pretzels to rise again. Bake in 450 oven for about 10 minutes or until golden. Brush with melted butter and enjoy! 









 
Toppings: after you brush with butter try sprinkling with coarse salt or for Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another shallow bowl make a mixture of cinnamon and sugar. Dip the pretzel into the butter, coating both sides generously. Then dip again into the cinnamon mixture. Enjoy!
