Basil Cream Chicken Skillet


Basil Cream Chicken Skillet
 
¼ cup Milk
¼ cup Dry bread crumbs
1 pound Boneless skinless chicken breast; 4 halves
3 tablespoons Butter
½ cup Chicken broth
1 cup Heavy cream
1 can (4 oz) Pimentos
1 cup diced tomatoes, or 1 can diced tomatoes
¼ cup Basil; fresh, minced (i also added some dry basil)
½ cup Parmesan; grated
2 tablespoons boursin cheese
⅛ teaspoon Pepper
 
Heat skillet over medium high heat.  Place milk and bread crumbs in separate shallow bowls.  Dip chicken in milk, and then coat with crumbs,  Add chicken to skillet with ½ of the butter about 5 min.  Add remaining butter flip chicken and cook another 5-8 min or until chicken is cooked.  Remove and set aside.


 
Add broth to skillet bring to boil over medium heat.  Stir in cream, pimientos, and tomatoes; boil and stir for 1 min.  Reduce heat, add parmesan cheese, bousrin cheese, basil and pepper; cook and stir until heated through.

 
 
Add the chicken back into the sauce.



 
Serve chicken as is, covered in sauce, or with rice or pasta.

Million Dollar Spaghetti

 


This recipe is posted all over Pinterest so I knew that I needed to try it.  A few comments - I found it to be a little bland, so next time I'm going to use a very flavorful garlic marinara and I will add mushrooms to the sauce.  I used more sauce than the recipe suggested, so as long as you use one of the large jars of marinara sauce, you should be fine.  It was definitely simple and the leftovers were great!
 
Million Dollar Spaghetti
 
1 lb of ground beef
1 large jar of spaghetti sauce
8 oz sliced mushrooms
8 oz of cream cheese
1/4 cup sour cream
1/2 lb cottage cheese
1/2 cup butter (1 stick)
1 pkg spaghetti 16 oz
Grated mozzarella and parmesan cheese
 
Preheat your oven to 350°. Boil your spaghetti noodles until al dente (firm).  Drain and set aside until ready to assemble.

Combine the cream cheese, sour cream and cottage cheese until well blended.



Brown  your hamburger and when done, drain well.  Combine the hamburger with your spaghetti sauce and mushrooms.




Put a few slices of butter into a 9×13 pan then pour half of your spaghetti noodles on top.




Take your cream cheese mixture and pour on top of the noodles. Spread well over noodles.

Pour the rest of the noodles on top of the cream cheese mixture.  Put a few more slices of butter on top of the noodles.  




Pour your spaghetti and meat sauce on top of your noodles.

Put it into the oven for 30 minutes. After 30 minutes, pour the desired amount of grated cheese on top and return to the oven for 15 minutes to allow cheese to melt.  Slice and serve like you would lasagna.

Spaghetti Sauce


Nothing tastes more like home than my mom's spaghetti sauce.  This delicious, meaty, and hearty sauce is perfect on a cold evening.  The best thing about this sauce is that you can make tons of it and freeze it for an evening when you don't feel like cooking.  Just boil some pasta and heat the sauce - tastes like it has been simmering all day.  When I make this, I usually double the recipe - you'll just need a really large pot!  I can then have dinner and freeze 4 tuperwares of sauce too!


Spaghetti Sauce

1lb ground beef
5 cans tomato sauce
2 small cans tomato paste
1 tsp. basil
1 tsp. oregano
2 tsp. Italian Seasoning
1 bay leaf
½ tsp. marjoram
½ tsp. rosemary
3 tbsp. vinegar
½ cup brown sugar

Fry ground beef and drain.  Add the rest of the ingredients and bring to a boil and simmer for at least one hour, stirring frequently.

Herbed Monkey Bread


This is a Paula Deen recipe that my mother recently prepared.  Paula Deen is the queen of butter and in my opinion, there was a bit too much butter and I might not add the last 1/4 cup next time I make this.  I didn't own a Bundt pan before - but this recipe convinced me that I needed one.  I also plan to serve this with marinara sauce next time.


Herbed Monkey Bread


1 stick butter melted, plus 1/4 cup melted butter, plus more for pan
1 cup grated Parmesan, plus more for sprinkling
2 teaspoons dried Italian seasoning
2 packages biscuits (Grands Buttermilk Buiscuits work best!)


Preheat oven to 350 degrees. Lightly butter a 12-cup Bundt pan; set aside.  In a small bowl, combine cheese and Italian seasoning.  Roll each individual biscuit into a ball. Dip each piece in the 1 stick of melted butter, then coat with the cheese mixture. Place dough into prepared pan; overlapping will occur. Bake bread, 30 to 35 minutes. Cover with aluminum foil during the last 10 minutes of baking to prevent excess browning, if needed.


Let cool in pan, 10 minutes; invert bread onto a serving plate. Drizzle remaining 1/4 cup melted butter on top and sprinkle with grated Parmesan.
